Lobia Vada

Ingredients

  1. Lobia aka black-eyed bean (Soaked Overnight)- 1 Cup

  2. Spinach Leaves (Chopped)- 1/2 Cup

  3. Fengruk (Methi) Leaves (Chopped) - 1/2 Cup

  4. Onion finely copped - 1 small

  5. Ginger - 1inch piece

  6. Green Chilli (Chopped)- 1/2 small

  7. Cumin seeds

  8. Salt

  9. Black Pepper

  10. Cooking Oil

Method

  1. Grind the soaked Lobia with Ginger and green chilli in the processor to make a thick paste with a sandy texture.

  2. Mix salt (to taste) and whisk briskly for 2-3 minutes to make the batter fluffy.

  3. Add the chopped onion, spinach and methi leave to the batter.

  4. Add Cumin seeds and Black Pepper (to taste) and mix well.

  5. Take 1-2 TbS of batter and cook in Appe Maker or fry in oil.

  6. Serve hot with coriander chutney/ketchup!
