Black Halwa (Carrot Pudding)

Ingredients

  1. Black Carrots - 1/2 Kg.

  2. Milk - 1/2 Lt.

  3. Ghee - 1 TbSp

  4. Sugar - 1/4 Cup

  5. Milk Powder -2 TbSp

  6. Cashews coarsely crushed- 8-10 pieces

  7. Cardamom - 1-2 pieces

Method

  1. Grate/Shred Black Carrots.

  2. Heat a heavy bottom wok / Pot and add the 1 TbSp Ghee

  3. Add Shredded/Grated carrots and roast for about 5 mins mixing continuously.

  4. Add milk and let the carrots cook in the milk till the carrot becomes tender and all the milk evaporates. and the mixture becomes thick and dry.

  5. Add sugar and cook till the mixture is dry again.

  6. Add Milk Powder and crushed cashews and cook for 1-2 mins.

  7. Garnish with additional crushed cashews before serving!

  8. Serve hot!
